The Cold or maybe the Hot Truth about the South Texas Rut and some good techniques to ensure a successful hunt by David E. Newman Jr.
The South Texas Rut can be confusing at best. This geographical area does not have true seasons of the year. It could very well be 90 degrees Christmas morning, which can make the Rut very difficult to predict. To do this and make your hunt more successful you really need some insight on a few determining factors: Weather, Locations in the field, and some Simple Hunting Techniques.
Weather and the Rut come hand in hand. This means that even the first South Texas cool front can bring a doe into estrus. Amount of daylight hours does not play a huge role in the Rut, due to the rapid temperature changes in this geographical area. It could be 95 degrees today and 65 the next and then back up to 90 for a week before the next cool shot. Deer seem to get frisky when it gets cool just like your pet dog. Have you ever noticed that good ole Fido gets really excited and hyperactive when the temperature falls? Therefore, many times the Rut starts in early September and does not end until late December, but it is in spurts.
Due to the erratic conditions, the hunter needs to be a little erratic on sight choice from the early season on. Deer do not stay in one place here. There is just too much open range and smell travels on the South Texas wind like wild fire. Hunters need to start early in mapping there locations and spend a lot of time in the field searching for those ever popular scrapes and rubs. Once found, if starting early enough, one can revisit the sights often. Deer will get used to your scent and find it just as a smell in the environment.
Odors are an easy fix. Popular scent cover products will work, but local vegetation works just as well. Dove weed, milkweed, and ragweed are great cover scents. Rutting deer rely on scent more than any other sense that they have. Boy and let me tell you when 2 mature bucks find each other in what each considers his territory the fur and dirt and grass and brush fly. All of these scents are thrown like caution to the wind. So when using rattling and grunt calling you want to be very vigorous in banging on the surrounding environment; i.e. ground, brush, grass, etc.. Toss these same scents up and watch the results, you will be amazed.
Make sure that your position in your desired shooting lane is upwind of your target area. Remember to always be safe, and watch the weather. For it is the weather that drives the Rut in South Texas.

Before I tell you how to catch catfish, I’d like to relate this true story. On July 1st, 2005, a Mekong giant catfish was netted by researchers who were identifying and studying fresh water fish species in all parts of the world. The fish weighed in at 646 pounds and was the size of a grizzly bear. It is the world’s record holding freshwater fish. The Mekong giant catfish is an endangered species and I’m not sure how researchers justified netting this granddaddy.
The fish was caught in Thailand’s Mekong River, which is home to a wide variety of giant fish species. The people of a remote village cleaned and ate the record holding fish. Giant fish species provide a source of protein for 73 million people that make their home along the river.
Though most catfish are a great deal smaller than the record holding fish, fishermen seek out catfish in rivers, lakes and streams world wide. If you are looking for a fish that puts up a good fight, study and learn the habits of catfish in your area.
Catfish migrate as the seasons change. When you know that the fish are spawning, take your fishing gear and head out to your favorite fishing hole. Catfish spawn near rocky structures and in contours of the waterbed. Use a topographical map that shows hidden structures and contours to know where to cast. These spots are where you will catch the big cats.
Catfish are scavengers, so dead bait works best. Any type of liver or poultry giblets will attract catfish, as will nightcrawlers, shad and shrimp. Use split shot sinkers and a bobber (float) to display baits at various depths.
Once you find a catfish spawning ground, return to it over the course of the next month to six weeks. Different species of catfish spawn at different times, so you have a good opportunity to catch catfish over the next few weeks.
Remember, the warmer the water, the closer to the surface the catfish will lurk. This is especially true in dirty or murky water. When water is clear, catfish tend to stay in the depths where they feel safe.

Home Canning Green Beans by Kazz
Canning your own green beans at home is a simple process. It just needs to be taken one step at a time. I have listed the entire canning process for you step by step. Once you open your first jar of home canned green beans, you will never want to taste another bean from a store. Home canned green beans taste so much better.
Green beans must be canned in a pressure canner. It is not safe to try canning green beans in a hot water bath. They may not be safe to eat. Only foods high in acid are safe for canning using the hot water bath method. You can use a pressure canner with a weighted gauge or a dial gauge.
Prepare the Beans- Choose fresh, young beans for canning. You will need to string the beans if you aren't using a stringless bean variety. Snap over a small portion of one end of the bean, then pull the end and string downward until the string pulls off. Turn the bean over and repeat on the other end. If you are canning a stringless variety, just snap off each end of the beans. As you are snapping or stringing the beans, remove any sections that show rust or bug bites. Break the beans in half or into pieces about 2" long.
Wash the beans thoroughly in hot water. Drain and rinse the beans with cold water. Let drain again.
Prepare the Jars- You can use pint or quart jars for canning green beans. Wash the jars in hot, soapy water and rinse well. Since you are using a pressure canner, you don't have to sterilize the jars. Be sure to check the jar rims for any chips or flaws. Only use jars with smooth rims. Keep the jars in hot water until ready to use. You can put hot water in your pressure canner and let it simmer with the jars in it.
Choosing Bands and Lids- Choose screw bands that aren't dented or rusted. Use only new lids for canning. Don't try to reuse an old lid. Simmer the lids in hot water until you are ready to place them on the jars. Be sure not to boil the lids as it can ruin the rubber gasket around the outside of the lid.
Filling the Jars- Pack each jar loosely with beans leaving 1" headspace. Add 1 teaspoon canning salt to quarts or 1/2 teaspoon canning salt to pints, if desired. It isn't necessary but does help flavor the beans. Fill the jars with boiling water to cover the beans, again leaving 1" headspace. It's easiest to pour the boiling water into the jars if you have a canning funnel. If not, set the jar in hot water before you try pouring in the boiling water. Never try to hold the jar in your hand.
Remove Air Bubbles- Air can become trapped between the beans. Run a knife down the inside of the jars. This will force bubbles to come to the top.
Prepare to Put Lids and Bands in Place- Wipe the rim of each jar with a clean cloth to remove any foreign matter from the rims. Anything between the rims and lids may cause the lids not to seal. One at a time, place a hot lid on each jar and immediately screw a band in place. Tighten firmly, but do not over tighten.
Pressure Canning the Beans- Make sure your canner has 3 or 4 inches of hot water in it. It's best to follow the instruction manual for your canner if you have one. Set each jar into the pressure canner. Make sure the jars aren't touching the sides. If your canner has a rack, be sure to use it. If it doesn't have a rack, place several thicknesses of cotton towels in the bottom of the canner before adding the jars. You never want to allow the jars to touch the bottom of the canner or they will break while cooking.
Dial Gauge Process Time- Process pints for 20 minutes and quarts for 25 minutes at 11 pounds of pressure if using a dial gauge canner.
Weighted Gauge Process Time- Process pints for 20 minutes and quarts for 25 minutes at 10 pounds of pressure if using a weighted gauge canner.
Remove and Cool Jars- Allow the pressure of the canner to drop completely before opening the lid! Otherwise you could get seriously scalded. Carefully remove each jar and place on a rack or thick towel to cool. Do not twist or tighten the bands. Allow the jars to cool completely before testing the seals. Once jars are cool, press down on the center of each lid. If the center of the lid is already down, it has sealed. If it is up and you are able to push it down, the seal failed. You can re-process failed jars by using a new lid and putting it through the canning process again. It's easiest to refrigerate any jars that didn't seal and use them within a few days time.
Once the jars have cooled and the seals have proved good, you can remove the rings and use them again. A little shortening or oil wiped around the inside of the bands will help keep them from rusting during storage.

Field Dressing Your Whitetail Buck by Andy Fidler
After making your kill, you first want to be certain that your prey is dead. Approach it carefully from the rear, and if you are using a tag, remember to validate and attach it immediately.
It is recommended to use a good quality, strong bladed knife. Keeping it sharpened ensures an easier time with the procedure. Cutting the deers throat is not necessary, as the blood will drain naturally during the field dressing process.
You can use rocks to prop up the deers legs. Start your cutting between the hind legs, and work down to the pelvic bone. After doing this, turn your blade around and cut up through the breastbone, and up the neck as far as you can get. Don't forget to hold the meat and skin away from the entrails while doing this. After cutting the windpipe in two, grab hold of it with both hands and pull down, hard. The insides should come out to about the animals midsection. Remove any rocks that you were using to support the deer, and roll it onto its' side.
Doing this on both sides, cut the layer of thin meat that is holding the entrails to the ribs, right down to the backbone. Get a firm grip on the entrails, and give a hard downward pull. All of the inner workings of the deer should now be removed.
Spread the back legs open by propping the animals rear end up on a rock. Use your knife to locate the seam where the bones grow together, pressing down hard to separate the bone. You may need to twist the blade from side to side to work your way through. Sometimes the use of a hatchet or saw is needed for the larger deer. If possible, hang it up on a tree by the head or antlers, and allow the blood to drain from the body cavity.
When transporting the carcass, be sure to keep it clean. Dragging the animal may get it dirty, and sometimes quartering or halving it is an excellent option to use when moving it back to camp.
Hang the animal by the head or hind legs for skinning, and try to do this within a couple of hours after the kill has been made. The deer should still be warm. Make a cut down the inside of each leg to the middle of the carcass, cutting only the skin. Cut the skin around the neck, as close to the head as you can, when hanging by the neck. Take a good hold of the skin with both hands, and pull down hard. The skin should peel off down to the front legs. If it does not want to come off smoothly, you will need to use your knife to separate the meat that sticks tightly to the meat.
Keep it in a cool, shaded area. A game bag or other form of protective covering may be needed to ward off flies. Once the dead animal has cooled throughout, usually taking about ten to twelve hours, the meat should have no problems with warm days, so long as it remains in the shade, and is not given an opportunity to heat up. You don't want your meat spoiling after all of that work.
After cooling and draining, the meat can be cut, or aged in a cool or refrigerated area for a week or two. Trim any fat that you can see, as this tends to become rancid very quickly.
Make your cuts when it is cured to your liking, and enjoy.

Doing this on both sides, cut the layer of thin meat that is holding the entrails to the ribs, right down to the backbone. Get a firm grip on the entrails, and give a hard downward pull. All of the inner workings of the deer should now be removed.
Spread the back legs open by propping the animals rear end up on a rock. Use your knife to locate the seam where the bones grow together, pressing down hard to separate the bone. You may need to twist the blade from side to side to work your way through. Sometimes the use of a hatchet or saw is needed for the larger deer. If possible, hang it up on a tree by the head or antlers, and allow the blood to drain from the body cavity.
When transporting the carcass, be sure to keep it clean. Dragging the animal may get it dirty, and sometimes quartering or halving it is an excellent option to use when moving it back to camp.
Hang the animal by the head or hind legs for skinning, and try to do this within a couple of hours after the kill has been made. The deer should still be warm. Make a cut down the inside of each leg to the middle of the carcass, cutting only the skin. Cut the skin around the neck, as close to the head as you can, when hanging by the neck. Take a good hold of the skin with both hands, and pull down hard. The skin should peel off down to the front legs. If it does not want to come off smoothly, you will need to use your knife to separate the meat that sticks tightly to the meat.
Keep it in a cool, shaded area. A game bag or other form of protective covering may be needed to ward off flies. Once the dead animal has cooled throughout, usually taking about ten to twelve hours, the meat should have no problems with warm days, so long as it remains in the shade, and is not given an opportunity to heat up. You don't want your meat spoiling after all of that work.
After cooling and draining, the meat can be cut, or aged in a cool or refrigerated area for a week or two. Trim any fat that you can see, as this tends to become rancid very quickly.
Make your cuts when it is cured to your liking, and enjoy.

Healthy Thanksgiving Holiday Tips by Ellen G. Goldman
I don’t know about you, but Thanksgiving is my favorite holiday. My kids tell me I feel that way because it is the only holiday when I get to be a guest, not a host. And although there is some truth to that, there are so many other reasons I love this day.
Thanksgiving is an opportunity to take stock of the many blessings in my life. Surrounded by my husband, children, parents, siblings, nieces and nephews, and other extended family, it is easy for me to feel thankful. I am so grateful for my wonderful family, great friends, a beautiful home that I get to work from, and a career that is more of a passion than a job.
And in an effort to make sure the Thanksgiving feast doesn’t sabotage your health goals, I am excited to send you these tips. I hope you enjoy them and have a wonderful Happy Thanksgiving!

Take exceptional care of yourself in the days leading up to the holiday. Eat well, get enough sleep, keep sweets to a minimum, and maintain your exercise routine. Figure out some ways to make your life a little easier, or do so for your host. If the holiday is at your home, ask a few of your guests to bring a dish you know they either love to prepare, or could easily pick up. They will feel honored that you asked. Instead of making the cranberry sauce that takes hours to prepare, purchase it from the local gourmet shop. If you are a guest, offer to prepare a specialty dish you enjoy making, or bring a dessert.
If you are not busy in the kitchen, plan an exercise session Thanksgiving morning. Perhaps an early morning bike ride, a trip to the gym, or walk in your town could become a new family Thanksgiving tradition.
Enlist the help of family members to watch over the kitchen or set the table while you take a twenty-minute break before the company arrives. Close your eyes for a power nap, take a bath, or meditate; whatever will make you feel relaxed and ready to greet your guests.
Eat a substantial, healthy breakfast in the morning, and a healthy snack before the festivities begin. Don’t show up hungry, or you’ll surely overindulge.
Look over the entire buffet before making your choices. Research has proven the more variety, the more calories we tend to consume. Only take small portions of the dishes you love, and skip those that are tradition but not really your favorites.
Ask your hostess for small portions to take home of your favorite dishes, rather than overeating them on Thanksgiving. She will be flattered, and you’ll get to truly savor the dish when you are not stuffed and uncomfortable.
Shift your focus away from the food, and towards the people who surround you. Engage in conversations with others who are farther away from the buffet table, eat your food slowly, and stop when you feel satisfied, not stuffed. Remember what the day is really about. An opportunity to count your blessings and enjoy your loved ones.

Going Night Fishing for the First Time by Oskar D
Fishing is a strange sport and people either love it or hate it. Like any sport, hobby or past time the sorts of people it attracts varies greatly. You get the avid match fisherman through to the die hard specimen angler. It’s this type of angler that brings me on to the subject of night fishing.
Specimen fishing is all about that one special fish, you are not fishing for quantity but I suppose you could say that you are fishing for size, or uniqueness. It is your quest to catch that one special fish – the fish that you set out intending to catch. I make logical sense that the longer your fishing line is in the water, the greater the chances are of you catching that special fish. It is for this reason that night fishing came about.
Going night fishing can be very similar to going camping… with the door open! In addition to your fishing tackle you will also need some shelter over your head, some people just use umbrellas, some use umbrellas with wrap around sides and some use bivvy’s (these are very similar to tents). You’ll then need a bed or a bed chair and this really depends on whether you intend to do much sleeping. One last essential item of kit is a torch, one of the best pieces of kit I ever bought was a head torch – it meant that I could keep my hands free.
One of the best tips I can given any one that is going night fishing for the first time would be to organise your self before dark. Make sure that you know where everything is and that you can easily gain access to it. The second tip I can give you is to take enough warm clothes. If you’ve never been camping before, you will be very surprised at how cold it gets at night – even in the summer you will be amazed at the chill that can be in the air.
Going night fishing really is great, it’s nice just to have that connection with nature, seeing the sunset and sunrise makes you feel as though you’re the only person on the planet and it really can’t be explained.
